Walking and Eating

Hubby and I have been walking about 40 minutes every day. Nothing too brisk, but it's enough to at least make me feel like I've accomplished something! It keeps me from being a total couch potato, at least.

My diet is just so-so. I do have my "bad" moments--sometimes I just really want French fries, dammit!--but other times I do pretty good. I've been making a lot of veggie stir-fry with brown rice lately... it's easy to reheat the leftovers, and I feel like it's pretty healthy for me. I've also been eating more fruit, especially apples.

Thanksgiving is right around the corner, but I'm not too worried about it. My vegan diet generally means that I avoid the typical temptations at holiday gatherings. No cookies or cakes or pies for me! And when I go to my parents or in-laws, I usually can't eat the mashed potatoes (butter & milk) or stuffing (turkey broth) either. So I just bring a few healthy dishes to share and enjoy the fact that I don't have to worry about overstuffing myself on unhealthy foods.

I do admit, though, that I usually make my own vegan mashed potatoes and stuffing (with mushroom gravy) around that time... sometimes I bring a little to Thanksgiving dinner. They are two of my favorite foods! And that way I get to indulge a bit and not feel totally deprived. I just try and keep the portions reasonable.

And 40 minutes of walking every day is good exercise!
